If you’re looking for a quick, nutritious, and delicious breakfast (or any-time-of-day meal), this Tofu & Chickpea Scramble is perfect! It’s packed with plant-based protein, fiber, and vibrant veggies, making it both filling and nourishing.

I love how versatile this dish is—you can enjoy it on toast, in a wrap, or on its own. Plus, it’s a great way to use up leftover veggies!

🥕 Ingredients

- 1 block firm tofu (pressed and crumbled)

- 1 cup chickpeas (rinsed and mashed slightly)

- 1 small carrot (grated)

- 1 zucchini (diced)

- ½ cup red cabbage (shredded)

- ½ cup capsicum (diced)

- 1 medium tomato (diced)

- 1 handful spinach (chopped)

- 2 spring onions (sliced)

- 2 tbsp nutritional yeast

- 1 tsp paprika

- 1 tsp garlic (minced)

- Salt & pepper to taste

- 1 tbsp olive oil (or cooking oil of choice)

🥄 Instructions

1️⃣ Prep Your Ingredients

- Press and crumble the firm tofu into small pieces.

- Rinse and drain the chickpeas, then mash them slightly with a fork.

- Chop, dice, or shred all your veggies so they’re ready to go.

2️⃣ Sauté the Base

- Heat 1 tbsp of oil in a large pan over medium heat.

- Add the Garlic, spring onions, and capsicum—sauté for about 2 minutes until fragrant.

3️⃣ Add the Tofu & Chickpeas

- Add the crumbled tofu and mashed chickpeas to the pan.

- Sprinkle in paprika, salt, and pepper. Stir well and cook for 3-4 minutes, allowing the tofu to absorb the flavors.

4️⃣ Add the Veggies

- Stir in the grated carrot, zucchini, and red cabbage. Cook for another 3 minutes, stirring occasionally.

- Add the tomatoes, spinach, and nutritional yeast—mix well and let cook for 1-2 more minutes, until the spinach wilts.

5️⃣ Serve & Enjoy!

- Taste and adjust seasoning if needed.

- Serve warm with toast, avocado, or in a wrap. You can even top it with some hot sauce or extra nutritional yeast!
